Creamy Cantaloupe Soup
Serves 2
  1. 1 tablespoon Sue BeeĀ® Honey
  2. 1 medium cantaloupe
  3. 1 cup orange juice
  4. 2 tablespoons mint leaves
  5. 1/2 cup nonfat yogurt
  1. Peel the cantaloupe and cut it into cubes.
  2. Place the cantaloupe, orange juice and mint leaves into a food processor and liquify.
  3. Add Sue Bee Honey and yogurt; process until the mixture is very smooth.
  4. Cover and chill for at least one hour before serving. Garnish with sprigs of mint.
