Curried Quinoa Salad With Cranberries

  1. 1 tablespoon Sue BeeĀ® Honey
  2. 2 cups water
  3. 1/2 cup celery
  4. 1 cup red bell pepper
  5. 1 cup green bell pepper
  6. 1/4 teaspoon crushed red pepper flakes
  7. 1 teaspoon curry powder
  8. 1 tablespoon cider vinegar
  9. 2 tablespoons soy sauce
  10. 1 cup quinoa
  11. 1/2 cup dried cranberries
  1. Rinse quinoa in plenty of water, drain.
  2. In medium saucepan, bring the two cups of water to a boil over high heat.
  3. Stir in quinoa.
  4. Reduce heat and simmer, uncovered, for 15 minutes or until water is absorbed.
  5. Remove from heat and let cool
  6. In small bowl, mix Sue Bee Honey, soy sauce, vinegar, curry powder and red pepper flakes, stirring until completely blended
  7. Combine, in a serving bowl, remaining ingredients.
  8. Gently stir in cooled quinoa, then soy sauce mixture.
