Honey Cranberry Oat Bread
  1. 3/4 cup Sue BeeĀ® Honey
  2. 1/3 cup vegetable oil
  3. 2 eggs
  4. 1/2 cup milk
  5. 2 1/2 cups all-purpose flour
  6. 1 cup quick-cooking rolled oats
  7. 1 teaspoon baking powder
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon ground cinnamon
  10. 1/2 teaspoon salt
  11. 2 cups fresh or frozen cranberries
  12. 1 cup chopped nuts
  1. In large bowl, combine honey, oil, eggs and milk; mix well.
  2. In medium bowl, combine flour, oats, baking powder, baking soda, cinnamon and salt; mix well.
  3. Stir dry ingredients into the honey mixture.
  4. Fold in cranberries and nuts.
  5. Spoon into two 8x4 inch greased and floured loaf pans.
  6. Bake at 350 degrees for 40-45 minutes or until wooden toothpick inserted near center comes out clean.
  7. Cool in pans on wire rack for 15 minutes.
  8. Remove from pans; cool completely on wire rack.
  9. Serve and enjoy!
