Honey Graham Muffins
  1. 1/8 cup Sue BeeĀ® Honey
  2. 3 cups crushed honey graham crackers
  3. 1/4 cup sugar
  4. 2 teaspoons baking powder
  5. 1 cup skim milk
  6. 2 egg whites
  7. 1 dash cinnamon
  1. Preheat oven to 400 F.
  2. Place cupcake liners in muffin pan and set aside.
  3. In a medium mixing bowl combine crackers, sugar and baking powder.
  4. In a separate bowl lightly beat Sue Bee Honey, milk, egg whites and cinnamon.
  5. Add the milk mixture to the cracker mixture and stir just until moistened.
  6. Spoon batter into muffin pan and bake for about 15 minutes.
  7. Let stand 5 minutes; remove from pan.
