Honey Pepper Beets
  1. 1/4 cup Sue BeeĀ® Honey
  2. 1 pound baby beets
  3. 1/4 cup cider vinegar
  4. 1 tablespoon mustard seeds
  5. 1/4 teaspoon crushed red pepper flakes
  6. 1 cup green onion
  1. Put beets in a medium saucepan.
  2. Cover with water and bring to a boil.
  3. Reduce heat and simmer until beets are tender, 20-25 minutes (beets may be steamed if preferred).
  4. Rinse beets under cold water, drain and slip off the skins.
  5. Slice beets into one-fourth-inch thick rounds and place in a bowl.
  6. In a small bowl, combine the remaining ingredients, except onion; pour over beets.
  7. Add onion and toss thoroughly.
  8. Chill for at least 3 hours before serving.
