Honey-Spinach Salad
  1. 1/3 cup Sue BeeĀ® Honey
  2. 1/4 teaspoon salt
  3. 1 garlic clove
  4. 1/3 cup olive oil
  5. 1 tablespoon lemon juice
  6. 3/4 pound fresh spinach
  7. 1 (11-ounce) can mandarin oranges
  8. 3/4 cup coarsely chopped walnuts
  1. Sprinkle salt in a large bowl; add garlic.
  2. Mash garlic and salt to a paste, using back of a spoon.
  3. Combine Sue Bee Honey, olive oil, and lemon juice in a jar.
  4. Cover tightly and shake vigorously.
  5. Add honey mixture to garlic mixture; stir well.
  6. Cover and chill at least 2 hours.
  7. Remove stems from spinach, wash leaves thoroughly and and pat dry.
  8. Tear leaves into bite-size pieces.
  9. Combine spinach, oranges, and walnuts in a large bowl; toss well.
  10. Pour honey mixture over salad, tossing to coat.
  11. Serve immediately.
