Honeyed Carrots with Cumin
Serves 12
  1. 1/4 cup Sue BeeĀ® Honey
  2. 1/4 cup water
  3. 2 teaspoons lemon juice
  4. 1 teaspoon salt
  5. 1 teaspoon cumin
  6. 48 cut baby carrots
  1. In a medium saucepan, whisk together all ingredients except carrots.
  2. Bring to a boil over high heat. Add carrots, stir and reduce heat to medium.
  3. Cook, stirring frequently, until most of the liquid has evaporated and carrots are tender, 10 to 12 minutes.
  4. Remove from heat and set aside to cool to room temperature.
  5. Serve, room temperature, in a bowl with toothpicks on the side.
