Mini Honey Cheesecakes
  1. 1/3 cup Sue BeeĀ® Honey
  2. 1 cup ricotta cheese
  3. 1/3 cup caster sugar
  4. 4 eggs
  5. 1 teaspoon ground cinnamon
  6. 1 lemon
  1. Beat Sue Bee Honey ricotta and sugar in a large mixing bowl until smooth and well-combined.
  2. Add the eggs one at a time, beating well as each egg is added.
  3. Blend in the cinnamon and the lemon rind.
  4. Spoon the mixture into eight lightly greased recesses in a muffin pan.
  5. Bake in a moderate oven 350 F for 20-25 minutes or until firm.
  6. Allow to cool and serve with a drizzle of extra honey, a dollop of cream or mascarpone, and berries.
