Minted Honeydew Soup
Serves 3
  1. 1 tablespoon Sue BeeĀ® Honey
  2. 2 lbs ripe honeydew melon
  3. 1/4 cup fresh mint leaves
  4. 3 tablespoons freshly-squeezed lime juice
  5. salt
  6. fresh mint sprig
  7. thin lime slice
  1. Process the ingredients in batches in a blender or food processor until smooth.
  2. Cover and chill at least 1 hour.
  3. Taste, adding additional lime juice, if necessary, and salt.
  4. Serve in individual chilled bowls, garnished with lime slices and mint sprigs, if desired.
