Ingredients
2 tablespoons Sue Bee Honey
1 large baguette
1/2 kg filet of beef
100 g roasted sesame seeds
oil oil
1/2 cup Thai sweet chili sauce
1/2 cup soy sauce
4 tablespoons date honey
2 tablespoons sesame oil
4 tablespoons mirin
4 tablespoons sake
50 g toasted sesame seeds
1 garlic clove
2 tablespoons brandy
1/4 cup olive oil
1 garlic clove
kosher salt kosher salt
coarse black pepper coarse black pepper
fresh thyme fresh thyme
fresh rosemary fresh rosemary
fresh oregano fresh oregano
fresh basil fresh basil
2 tablespoons soy sauce
1/4 tablespoon prepared wasabi
sprouted sunflower seed
Directions
  1. To prepare the fillet:.
  2. Mix all the marinade ingredients, and marinade the piece of meat for a minimum of 20 minutes and up to 2 hours.
  3. Remove the fillet from the marinade and dry with a paper towel.
  4. Roll the fillet in the sesame seeds and pat them down hard into the meat.
  5. Heat up a heavy frying pan for at least 7 minutes, until smoking, and then add the olive oil.
  6. Sear the meat for 2-3 minutes on each side and then remove to a cutting board.
  7. Wait 5-7 minutes for the juices to settle, and then cut into thin slices.
  8. To prepare the sauce:
  9. Place all the sauce ingredients with the exception of the sesame seeds and the sprouts into a saucepan. Cook on high heat until the sauce has been reduced by half and has thickened.
  10. Let sit at room temperature slightly and add in the sesame seeds.
  11. Keep the sprouts for the garnish at the end.
  12. To make the crostini:.
  13. Preheat the oven to 220 degrees centigrade.
  14. In a bowl, mix the olive oil, minced garlic, minced herbs, and add the coarse salt and pepper to taste.
  15. Spread the baguette slices with the herby oil and bake in the oven for several minutes until the slices are toasted.
  16. To put the whole thing together:.
  17. Mix the beef slices with the sauce.
  18. Place one slice of beef on each toasted baguette slice and top with the sprouts.
  19. Serve to ooohs and aaahs.
