Low-Fat Salmon Bisque

Servings: SERVES 4
Ingredients
1/2 tablespoon Sue Bee Honey
2 cups cooked salmon
2 tablespoons cornstarch
2 tablespoons butter
1/4 teaspoon pepper
1 teaspoon salt
1/8 teaspoon baking soda
2 cups water
1 teaspoon parsley
1/4 cup diced celery
1/4 cup diced onion
1 cup tomato juice
2 cups skim milk
Directions
- Combine first six ingredients (salmon, tomato juice, celery, onion, water and parsley) and simmer fifteen minutes.
- Add the next six ingredients (baking soda, honey, salt, pepper, butter and cornstarch).
- Mix well until the butter has completely melted and thin with milk. Using less or more milk for the consistency you like.
