Sue Bee Honey Butternut Squash Soup
  1. 1/4 cup of Sue Bee® Honey
  2. 1 butternut squash
  3. 1/4 stick butter
  4. 1/2 teaspoon garlic powder
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon pepper
  7. 2 bell peppers
  8. 1 yellow onion, chopped
  9. 1 pint heavy cream
  10. 1 can of pumpkin
  11. 4 cups of chicken broth
  1. Preheat oven to 450 F.
  2. Cut the squash in half and baste it with the butter. Sprinkle garlic powder, salt and pepper on top.
  3. Toast the squash and bell peppers in the oven until soft – about 45 minutes.
  4. In a non-stick pan, saute the onion until soft.
  5. Blend Sue Bee Honey, squash, peppers, onion, heavy cream, pumpkin and chicken broth in a food processor until smooth.
  6. Transfer soup to large pot and cook to desired temperature.
  1. Taste test as you add the cream as it can make the soup very sweet.
