Sue Bee Honey Frosted Pumpkin Muffins
  1. 1 cup Sue BeeĀ® Honey
  2. 1 teaspoon vanilla extract
  3. 1/4 cup low-fat buttermilk
  4. 2 eggs, at room temperature, slightly beaten
  5. 1/4 cup vegetable oil
  6. 1 cup solid-pack pumpkin
  7. 1/2 cup chopped walnuts
  8. 1/2 teaspoon salt
  9. 1 teaspoon baking soda
  10. 1-1/2 teaspoons ground cinnamon
  11. 2 cups all-purpose flour
  12. cooked pumpkin seeds, for garnishing (optional)
  1. Preheat oven to 350F.
  2. Line a muffin pan with 12 paper muffin cups.
  3. In a large bowl, stir together flour, cinnamon, baking soda and salt.
  4. Stir in walnuts.
  5. Set aside.
  6. In a separate bowl, Sue Bee Honey, blend pumpkin, oil, eggs, buttermilk and vanilla until smooth.
  7. Pour pumpkin mixture over dry ingredients.
  8. Stir just until mixed.
  9. Spoon batter into paper lined muffin cups, filling each to just below the rim.
  10. Bake at 350 F for about 25 minutes or until a toothpick inserted near the center of muffins comes out clean.
  11. Let pan cool on rack for 5 minutes.
  12. Remove muffins from pan and let cool on rack completely.
  13. Top with cream cheese frosting and sprinkle with pumpkin seeds, if desired.
