Sweet Potato and Apple Casserole

  1. 1/2 cup Sue BeeĀ® Honey
  2. 1/4 teaspoon ground nutmeg
  3. 1/2 teaspoon ground cinnamon
  4. 1/2 teaspoon ground ginger
  5. 2 tablespoons bourbon
  6. 1/2 cup light brown sugar
  7. 1/4 cup butter
  8. 1/4 cup fresh lemon juice
  9. 3 Granny Smith apples
  10. 3 pounds sweet potatoes
  11. 1 cup pecan halves
  12. 1 cup miniature marshmallows
  1. Combine Sue Bee Honey, nutmeg, cinnamon, ginger, bourbon, brown sugar and butter.
  2. Cook on medium heat until sugar is dissolved, stirring frequently; set aside.
  3. Slice apples lengthwise and toss with lemon juice.
  4. Slice baked sweet potatoes.
  5. Spray 9x13 pan with nonstick cooking spray.
  6. Arrange apples and sweet potatoes in layers in casserole.
  7. If using pecans, sprinkle them on top.
  8. Pour sauce over casserole.
  9. Bake at 350 F, uncovered, in middle of oven, basting occasionally, for about 30-45 minutes or until apples are tender and sweet potatoes are hot.
  10. Add marshmallows on top of casserole during last 15 minutes of baking.
