Sweet and Sassy Cornbread
Serves 8
  1. 1 cup all purpose flour
  2. 3/4 cup cornmeal
  3. 1 Tbsp baking powder
  4. 1 tsp salt
  5. 4 Tbsp Sue BeeĀ® Honey
  6. 1 large egg
  7. 1 cup buttermilk
  8. 1/3 cup melted butter
  9. 8 oz softened cream cheese
  10. 4.25 oz can of diced green chiles
  11. 10 oz can of corn (drained)
  12. 1 cup of your favorite grated cheese to fold in last (I like PepperJack cheese to add a little more kick)
  1. Combine all the ingredients except the cheese.
  2. Mix well, then fold in the cheese.
  3. Pour into greased pan and bake in a preheated oven at 350 degrees.
  4. Bake for 15-20 min or tooth pick comes out clean.
  1. It bakes more evenly in a bundt pan. Turn bunt pan upside down on platter and serve.
